Tex Mex Tilapia

This is one colorful dish

I cooked up some Bamboo Rice to make the bed that the fish will sit upon. Bamboo Rice is a light green color as you can see in the picture and has a white rice taste.

I place the tilapia fish in a baking dish and pour some Diced Tomatoes and Green Chilies on top of the fish.

When there were 2 minutes left on the fish I crumble up some purple corn chips on top of the Diced Tomatoes and turn on the broiler to toast up the chips. This makes a very attractive dish to serve.
